River Cottage veg - recipe question

Does anyone know the name of whatever it was that Hugh made for the veg pickers as a veggie alternative to a bacon butty? DH reckons it was North African, and started with a sh or ch, it had tomatoes, peppers, onions and eggs in it. And he'd quite like to try it, but didn't think to note down any useful details such as what it is or how to make it.

Any ideas?

Chachouka. I made it for supper the other day (but with chicken eggs not duck eggs) and it was absolutely delicious. And quite easy to make.
