I am planning on making 2 small cakes, one is in the oven, the other is made and ready to go...but will the mixture be alright if I leave it until tmw to cook. If not Ill have to stay up v late to cook both?

Does anyone know if this will be ok or not?

Thanks

You're supposed to cook cakes as soon as possible after making the batter, but maybe as the Xmas cake is so heavy it won't matter as much if it's left until tomorrow.
But I couldn't tell you if it's OK to put in fridge until you cook it. If you do make sure it's back up to room temperature before you cook it and see how it turns out!

Thanks everyone, I left it in the end but not in the fridge and it seems fine. Though I haven't cut into it yet so I won't know for sure until Xmas!

Great Smile I am sure if it looks fine, it will taste delicious.
