inspire me with me root veg...!

BN squash, sweet pots, pots, swede, parsnips, carrots and loads of onions. Did casserole and soup last week. Was thinking of big tray of roasted veg tonight, served with veggie sausages, mash and onion gravy. But...

fancy roasting them in a bit of a marinade, was thinking whole grain mustard and a drizzle of maple syrup. Would that work?

I do my root veg in a glug of honey and butter with some fresh thyme if I have any. They caramelise on the edged, yummmmmmmy!!

I think yoru mustard and maple syrup would work. I'm not keen on mustard myself though.

yes that sound good. I would add some kind of vinegar - balsamic? to cut through sweetness and make a kind of glaze. Also nice is roasted root veg, done like roast potatoes til golden, then with cheese sauce poured over and grilled til bubbling and golden mmm!

I love love love root mash. On its own, on top of shepherds/cottage pie etc. Any combo (apart from parsnip, don't like the smell of them boiling) Plus you can freeze it :)

thanks guys. good tip betabaker, will add a slug of balsamic to the mix. Starting to sound really appetizing now!

If you throw the onions in whole (don't do anything to them at all but roll in the oil or butter) they steam inside their skins and are DELISH.

Pop some small tomatoes in there too. Yum. Or bake scrubbed beetroot, then peel them whilst still warm and slice into a goats cheese salad.

Or just poke holes in the BN with a fork, microwave it 20 minutes, split in half, remove seeds, stick some butter, salt and pepper on the flesh and eat for a fab lunch for two. It is lush.
