Christmas cake palaver continues...

First used the wrong sugar and now the bloody cake is really oily, I don't remember my other cakes being so greasy but maybe I'm inspecting it too much and finding all sorts of faults...

It smells quite buttery but I know I used the exact amount of butter needed so..I checked my scales and they are weighing less. So I have used around 25g more butter than I should have done although the ratio to the flour and the sugar should still be the same as they too were weighed on the scales. Maybe 25g is not that much it's not like it's 250g more!!

When I press the cake down on the top I can hear a 'squelchy' sound don't think this is how it should be! Don't know what happened to the blooming cake this time.

If anyone has made an Xmas cake how has yours turned out? Maybe I should stop thinking about the cake Grin

You made your cake before my birthday, which is at the end of this week.
I put a curse on all pre birthday Christmas baking.

I am sure it wil be OK. Different, but OK. I love really moist fruit cake. Also, great with custard if you really can't face it as a cake.

Thanks, the cake has dried out. A lot. It is now a bit hard!!!!!!!
I am giving up on said cake and not talking about it any more. I'll drown it in brandy and we'll all be so pissed we won't notice how crap it is.
