Antipasti as ingredient -

Hi

I received a jar of asparagus tips in olive oil & a jar of porcini mushrooms in olive oil, both from Fortnum & Mason and very lovely they look too.

I'm sure they'd be delicious all on their own as antipasti but I am curious to know how they might be used as ingredients in a main meal. I think the excess of olive oil is killing my inspiration as I think anything they're added to might become too oily.

Any suggestions?

oooh, i would just leave them as antipasti - yummy!

Pasta with some homemade pesto, add the asparagus and/or porcini, black pepper - perfect!

Ooh yum, pasta topping sounds good

I also have a small jar of shaved truffles in oil - perhaps a bit too rich with just pasta - any thoughts?

How about on a puff pastry tart? You'd have to drain off the oil reasonably well. Add some melty cheese. Mmm

Or stir into a risotto? You could reserve some of the oil and use it to add extra flavour to salad dressing.
