I need a foolproof recipe for tablet

DH is Scottish and sometimes craves tablet (Scottish people will know what it is but in case anyone doesn't )
it's like fudge, but not soft or chewy.
It's got a white cloudy 'bloom' on the surface and snaps when you break it. Then the melt on your tongue experience.

I'm guessing butter,sugar,condensed milk (all healthy ingredients Grin ) but need a recipe and how to cook/how long to cook.

Ah, now I love Tablet (Im Scottish too) but have never been able to make it even with a recipe!!

oh me too!!

I made some last weekend which tastes right, but it's not smooth on the top, it's like a lava field

....i do have it on good authority that butter must never be put into tablet. The argument is over condensed milk vs evaporated and whether or not you damp the sugar with milk before you start!

If you mix everything on a very low heat at first then you don't have to pre damp the sugar (although some people do) as long as the sugar has completely dissolved.

set aside a good hour for tablet making and it is nicer in a deep tin so you get fat tablet - the skinny tablet tends to harden quickly. Double up the quantities because it is worth it. Grin

Any leftover tablet can be broken up and mixed in with a tub of vanilla ice cream then refrozen.

My Tablet recipe is ...
A teacup of milk, 2oz butter, 2lb sugar, small tin condensed milk or half a large tin (NEVER evaporated), 1 tablespoon golden syrup, vanilla extract.

Put milk sugar and butter in a large heavy bottomed pan and heat gently until all the sugar is dissolved.
Add condensed milk and bring slowly to the boil stirring constantly.
Once boiling, add the golden syrup and continue to boil for 5 to 10 minutes until the mixture turns a light golden colour and forms a soft ball (when a teaspoonful of mix is dropped into a cup of cold water - watch you don't burn your fingers when squeezing to check the ball of mixture is soft)
Take off the heat and add a few drops of vanilla extract.
Beat mixture with a wooden spoon until your arm feels like it will drop off you feel the mixture 'graining' as you mix it.
Pour into a tin lined with grease proof paper or baking parchment and allow to cool. save the scrapings from the pan on a plate to eat immediately
Score the surface with a sharp knife and then you should be able to 'snap' it along those lines.
Hide tablet from family and devour when they are not looking

oh i am in a dilemma now!! I shall try your recipe with butter!

but you have given me a fab idea for how to dispose of my not quite right tablet with the ice cream tip.
