Ok book club is meeting at mine on Monday. I'd like to serve a feta and pomegranate salad (just because I think it will be yummy). But what elese to go with it for a light supper? Previously I've served blue cheese and carmalised onion tarts, pesto and tomato puff pastry things. Just looking for some new ideas please.

What is a light supper? Is it dinner in terms of calorific content, but made up of lots of little delicious poncy bits and pieces? Or will people have eaten dinner so it's a snack? Confused

Just had falefel for lunch, and I think it would go really well with feta and pomegranite salad.

bagelmonkey · 12/11/2011 13:39

What's the book?
Could you chose something to complement it?

IdontknowwhyIcare · 12/11/2011 13:41

Sorry HugosGoatee, what I mean is there will be about 12 people some will be ravenous and others just want a little something to soak up the alcohol coffee. So anything really that I can ensure there is enough if they are all starving or have the next day as leftovers rather than them leave muttering I didnt feed them enough.
FF falefel a good idea (easy to buy here as well).

smoked salmon and cream cheese on crackers? One of my favourite light meals. Except I use Boursin instead of some boring ol' plain cream cheese. Grin

bagelmonkey not to get off track but its The Finkler Question bloody awful interesting book. I could serve something Jewish maybe, a la Jamie last week. Like cheese and salmon, might make a roulade/mousse type thing, just to be a bit poncy ;-)

Actually, smoked salmon and cream cheese on half bagels is pretty nice (just deferring to bagelmonkey's name there!)

This must win the most poncy thread ever! Grin

IdontknowwhyIcare · 12/11/2011 15:07

Not a lover of Doritos but walkers cheese and onion and grazia would do it for me. this last book was pants. Bigtime pants.

Not sure if you've decided yet but if you are still looking for ideas, these parmesan cheese wafers are soooooo easy and very tasty:
200g coarse grated parmesan cheese (I buy a bag, it's easier)
2tbsp plain flour (or you can use rice flour/potato flour if there are any wheat intolerants in your group)
2 tsp olive oil
pinch black pepper, ground
pinch rock salt

Optional extras: chilli flakes, fennel seeds (1/2 tsp each)

Grease a flat baking tray and put in the oven, preheat to 190 deg C
Put the cheese in a large mixing bowl and add in all the dry ingredients, mix well.
Add the oil and rub in gently with your fingertips to give a dry crumbly mix.

Remove the hot tray from the oven and drop 1tbsp of mix at a time onto the hot tray, using the spoon to shape the mix (the recipe suggests rounds but I tend to do fingers). You may need 2 trays for all the mix, depending on how large your tray is. I think I get between 16 and 20 fingers but am not sure, it's been a while! Blush

Bake in the middle of the oven for 10mins; then turn them over and bake for a further 3-5 mins until they are golden brown and lacey in appearance. Allow to cool on the tray for about 5 minutes then use a spatula to remove them to a cooling rack.

They're best done on the day; they do stay nice for another 24h in an airtight container but after that they tend to go off a bit. They are VERY moreish Grin
