Lancashire Hotpot anyone?

Has anyone got a good recipe for Lancashire Hotpot? Must be the genuine article, tried and tested (and successful) recipe only please.

Also, any other good recipes for stews/casseroles, preferably not tomato based as all my current recipes are and I am looking for something different, no mushrooms (make dh seriously ill) and not spicy: just good old fashioned, warming winter stews.

I made a really fab pork casserole last night -:

pork steak - 500G - cut into chunks
garlic - -1 clove
onion - chopped
apple -- granny smith, peeled, cored and sliced
sage leaves (4 large or 8 small) - chopped
Kallo organic veg stock cube
can cider
plain flour

brown pork in a little olive oil,remove from pan, soften onions, add garlic, add flour, stir.

Add can of cider and stock cube, sage and apples

Add pork back in

simmer for a few mins

put into casserole dish and coook in oven 120 c for about 1.5 hrs.
