Souffle for starter????

Help! Have planned dinner menu for tonight with parmesan & gruyere (sp?) souffle for a starter and, having had the thought 'you can't serve a cheese souffle as a starter', am having a major panic attack now.

Can I serve it????

Delia does a wonderful twice baked goats cheese souufle, and we have that as a starter.

Oooh great ... LadyS - how do you serve it? I was just going to serve in ramekins with a teaspoon but then in my recipe it says to serve turned out onto some salad leaves (a no no for me cos all I can get in this backwater is wilted iceberg!).

He says to make sure the ramekins are well buttered and use a knife to loosen the edges.
