Foolproof fudge recipes please!

I have had mixed success with fudge in the past, but have bought a proper thermometer and am ready to have a go.

Need a recipe which has condensed milk in it as I have several tins.

Also, please can you advise how long it should keep for in Kilner jars? Is this the best way to store it? Last year it started to sweat a bit, water coming out in droplets. Did I do something wrong, how can I prevent that?

This recipe. The marshmallow creme (I used those mini marshmallows you can get on the baking aisle) helps with the setting, but you get a more plasticeney texture than with true fudge.

There is loads of other info about fudge making on here too.

Second BeerTricksPotter's recipe - looks identical to one which Kirstie Allsopp gave out on Twitter and I tried. It worked perfectly and it was deeee-vine, especially once I had pressed brazils and marshmallows into the top to make it heart attack inducing rocky road fudge.

Oh god they look amazing........
A fact I forgot to mention is that my awkward DH has a severe nut allergy so pistachios are out! I wonder if I could pop raisins or something in instead though.
