Parsnip glut

I find myself with way more parsnips than I can ever anticipate using.

Can you let me know your best ever parsnip soup recipes?

2 tbsp olive oil, 1 onion chopped, 2 cloves garlic sliced, 1kg parsnips peeled and cut to chunks, 3 sprigs thyme, 3 tbs honey, 1-2 tsp hot curry powder, salt and pepp, 1.5 litres chicken stock, 450 ml double cream.

oven to 200. place everything except stock and cream into tin. roast for 30 mins.

place all but 250ml of stock into saucepan with cream, once boiling reduce to simmer. add parsnips and simmer. pour remaining stock to baking tin and scrape stuff off bottom and add to saucpan. cool slightly and blend.

if you do the bit before you add stock it makes lovely roast parsnips

i thought it sounded disgusting but was actually lovely
