Fairy cake mountains - why?

Can someone explain to me why my fairy cakes and cupcakes rise in the centre and end up like little cake mountains. They taste lovely but just dont look nice and flat and the icing just pools around the edges. Is it that everyone else just cuts the tops off or am I doing something wrong in the baking?

What proportions of ingredients do you use and how much mixture do you put in the cases? Usually if mine rise too high I've either overfilled the cases (2/3 case is fine, although it always looks too little and then I make the fatal mistake of adding more mixture Grin) or put too much baking powder in.

Today I used 2 eggs, 100g self raising flour, 100g caster sugar and 100g butter, a bit of vanilla and that was it. I only fill the cases 1/3 full too. It's puzzling me as Jane Asher's don't look like Snowdon and I follow her instructions to the letter Confused

I saw someone doing a larger cake and leaving a little dip in the middle when they put it in the cake tin so it was flat when it was cooked. Admittedly that was on a larger scale but maybe worth a try?

I think it can be because the oven is too hot. Try turning it down a bit and also try putting it on a lower shelf with an empty baking try above to shield them from direct heat.

I have 125g of flour, sugar etc for 2 eggs and mine never dome. I bake at 170, it may be your oven is too hot, causing too quick a rise?

I think too hot must be it then because I have it on 190 and they do seem to rise very quickly. Thanks ladies will turn it down and see what happens.
