I have two chicken breasts defrosted and zero ideas of what to do with them. Have been ill lately and not doing much in the way of coolly so feel eg deserves to come home to a prepared meal tonight...any inspiration? What are you having?

What else have you got kicking around? If you have bacon, you could wrap them in bacon and roast them. Or cut them into strips and stir-fry with veg? Or make hot chicken sandwiches?

chicken risotto, with whatever veg you have (leeks, onions, peas, pumpkin?)

chicken and veg stir fry with rice or noodles

chicken curry with rice

chicken cooked with tomatoes and olives and served with pasta

a simple chicken pie made with chicken in a white sauce with veg and topped with mashed potatoes (like fish pie)

Yes, have bacon! Thanks. I did think of a stir fry but only have broccoli and greens beans in the way of veg so thought it might be a bit dull

Cheers, didn't think anyone would reply so quickly
