I'm cooking dinner for six people - my closest friends so no particular need to impress, though everyone likes cooking so need to make a bit of an effort IYSWIM. One is vegetarian. What on earth should I cook? We often do an Indian feast with several different curries, but that's my DH's specialty so don't want to step on his toes. I'm good at roasts but if the meat is the main focus I feel a bit bad for the veggie - I'd rather do a meal with several different things to choose from, or something (like lasagne for example) that I can make a little veggie version of. I don't really want to do lasagne as I cooked it last week. I like making pizzas but only have one pizza stone.

I am considering having a Greek theme and making a moussaka, together with some Greek salad and olives/dips as a starter. ANy other ideas for Greek mains I could make?

Or any other ideas? Thank you!

The Greek idea sounds lovely.

Google for a gigantes beans recipe - v nice and will be good as a main for the veggie and a side for everybody else. You could do a big dish of stuffed peppers, courgettes, tomatoes, aubergine maybe as well.

Or a feta and spinach pie.

Ooh, ooh, everyone likes feta and spinach pie (well, I certainly do). Good idea. Will look up gigantes beans.
