Making shepherds pie from left over roast lamb

I know, this should be obvious, but I've never used leftovers in something like this before.

When I make the meat sauce bit do I just chop the lamb small and use like mince, or do I make up the veg bits first into a sauce then add chopped up lamb.

I've never done this but they did it on Radio4 www.bbc.co.uk/radio4/features/womans-hour/cooktheperfect/perfect/shepherds-pie/ and it sounded lovely, hth.

I did this this week with the recipe from Economy Gastronomy here. Basically you make the sauce first though, you don't want to fry the lamb or anything.

I always add a glass of sherry to the sauce. It cuts through the fat.

Don't worry, the alcohol evaporates, but just leaves a nice residual flavour.
