One pot meal recipes please

i just saw there's a great thread on soup recipes in discusions of the day, I have been wanting recipes for soups and also one pot meals/ casseroles. Once a week I have to cook a meal like this and am running out of ideas. Anyone got any good suggestions?

Roast chicken is great because you can throw in any veggies you like. Mac and Cheese is fantastic:

I use shell pasta because it creates yummy bowls of cheese. Just boil the pasta and pour it into a large casserole dish. I use a whole bag of dried pasta and an 8oz brick of grated mature or extra mature cheddar- saving two handfuls. Shred the cheddar and add it into the casserole dish evenly. I like to add 1 sauteed yellow onion and 2 cloves of garlic which take only a minute to get soft. Just mix these all in with about 3 wooden spoon scoops of soured cream. I top the casserole with the handfuls of leftover cheese and maybe some parm and breadcrumbs or crushed croutons if you like. Bake covered in foil at 200 until cheese melts through (maybe 10-15 min) and broil for just a couple minutes watched until tops starts to brown/crisp. Can serve immediately and leftovers hold up well for a few days in the fridge. Reheat in microwave, oven or in a non-stick pot. Super easy dish because you don't really have to measure anything, doesn't require seasoning, and is really comforting/lasts well.

I generally cook in bulk and dishes that are easy to improvise with so let me know if you need any tips or more recipes!

Lamb shoulder stew in the MN recipes section. I made it last night with diced lamb. Was bloody lovely.

Yes yes yes!!! : lamb shoulder stew is mine!!! I love to hear people enjoying it! I am about to try converting it for my slow cooker!

Favourite new recipe i tried recently

Chorizo and butterbean stew

1 Chorizo sausage approx 200g
3 400g tins chopped tomatoes
3 400g tins butterbeans
1 large onion,diced
2 red onions cut into "petals" (I sliced them into quarters and then seperated them out)
100ml water
200ml red wine
Salt and pepper
Handful of thyme

Remove skin from chorizo and chop into 1cm chunks.Fry diced onion until soft but not brown.Add the red onions and allow to soften,then add the chorizo and cook for 5 mins.Add the red wine and cook for a further 5 mins.Place into slow cooker,add the chopped tomatoes,butterbeans,water and thyme.Cook on high for 2 hours.

The recipe suggests serving with crusty bread but i did mine with jacket spuds.Was yummy.
