Can I make rice pudding with paella rice!?

Bought some by mistake and it probably won't get used, can I make rice pudding? If so how?

Is it too late to take it back to the shop? Pudding rice or risotto rice is just short-grain rice that cooks down nicely in a pudding. Paella rice will give you a slightly different result but I'm sure it would be fine. This Delia recipe is one I've used before.

Yeah bought it ages ago thinking I'd picked up risotto rice, it's the second time I've done it! Blush

I'd have thought paella rice (Bomba?) would work in a risotto tbh.

Arborio rice works fine. Might just be that you need to make sure it has enough liquid. I use 100g arborio and 700ml semi skimmed milk. Add nutmeg or grated lemon if you wish then shove in the oven for a couple of hours. Randomly my dd asked for it tonight!

Why don't you just make a paella?

The Moro version is delicious but a real PITA. Whatserface did a less faffy version the other week. Hang on I'll find it... Here
