I did it earlier and wondered how long it takes to set? only been two hours so far but still pretty soft. Am resisting putting in fridge as recipe says not to.

Just wondering if you've beaten it enough. Fudge needs to be beaten until the thread dropping from the spoon into the fudge almost stops blending in, if that makes sense.

If it doesn't set, you can always put it back in the pan, heat very gently until all the sugar dissolves, and then reboil. I've always used the test of dropping a little into very cold water to test soft ball stage, rather than relying on the temperature from a sugar thermometer.
