hello everyone, I am gearing up to do the turkey - we have it tonight. So far I have come up with cooking times ranging from 2 and a half hours (Nigella) to 5 (on the label!)eeeek. I'm tempted to go with Nigella (which is from room temp) The label is, I would guess a bit random, probably based on worst case scenario - cooked from fridge, crap oven etc. Has anyone used Nigella's timings before and if so are they ok?

I found this number in a magazine for you if it helps. Its free, and called the British Turkey Information helpline. 0800 783 9994. They are open until 5pm Christmas Eve!

Either that or it says here: Allow 18 minutes per 450g/1lb after stuffing. In a convential oven cook at 190C Gas 5.

britishturkey.co.uk- yes, there is such a site!

Imo, cheffy types always underestimate cooking times. Assume it will take longer than you think and keep skewering it for the juices to run clear. If it's done sooner - take it out, it will keep warm for ages. Nothing worse than everything else being ready and cutting into the turkey to find it still pink inside...

And remember you have to weigh it after it's stuffed (if you are stuffing it) and calculate cooking times from that.
