The nicest roast parsnips?

Can anyone tell me the nicest way to roast parsnips? I've never cooked them before but my mil made some lovely ones and I want more! (unfortunately she is now on holiday so can't ask her).
Do I parboil and roast with the potatoes - or longer or shorter cooking time?
On one of the Sainsbury's ad's Jamie recommends doing something with maple syrup?

I parboil, but find they take less time round the roast than the spuds

tassis · 23/12/2005 18:21

oooh, yes you want honey or maple syrup for sure

now idea how, but i'm sure someone'll tell you in a minute (if not I'll check delia for you!)

Roobietherednosedreindeer · 23/12/2005 18:23

We're having them with parmesan a la Delia

Enideepmidwinter · 23/12/2005 18:24

I tend to just roast them quite plainly

find them sweet anyway

tassis · 23/12/2005 18:28

i've never been convinced that they'd work with parmesan. are they nice roobie?

Blandmum · 23/12/2005 18:38

I have had a roast parsnip and parmasan soup, which was wonderful

Tinker · 23/12/2005 18:46

I don't bother parboiling them. Straight in to roast.

The sectret I think is in not cutting the bottom half lengthwise, but instead cutting across the middle, then the top piece into half lengthwise.

~T~his gives a good ratio of squidgy inside to crispy ouside.

I usually parboil for 5 mins but I am considering not doing so this year ande seeing how it goes!

I dont parboil parsnips but do parboil potatoes....
stick unparboiled parsnip in with parbolied potatoes and they tae the same time

I am going to do them with either honey or maple syrup...not decided yet

cupcakesbakingonanopenfire · 23/12/2005 19:30

soapbox - so are the bottom half of the parsnips unsliced?

And how do you do them in honey - do they still go in the roasting tray?

Cupcakes - yes they are, so from each parsnip you get 3 good chunky pieces. Otherwise I find they go too hard and crunchy!

Roobietherednosedreindeer · 23/12/2005 19:50

Not sure tassis, rather riskily it'll be the first time I've done them on Christmas day.

dingdongmeggymooonhigh · 23/12/2005 19:55

Some toasted sesame seeds can balance the sweetness of honey or syrup. I love them this way.
