Ideas for veg side dishes with roast dinners

I normally just steam varied green veg and carrots or occasionally roast parsnips with roast dinners. I was a bit bored yesterday while waiting for my chicken to cook so mashed some parsnips and swede with double cream and it was lush (admittedly anything with cream usually is :o) I'm now inspired to try some slightly fancier veg side dishes with my roasts. We eat pretty much all veg in this house, except peas, so any suggestions apart from those are very welcome :)

Braised red cabbage is a favourite in this house. DH always requests it if I ask what he wants with a roast. I think it's lovely and wintry.

Love red cabbage. Cut up very fine and simmer with grated apple, caraway seeds and a dash of wine vinegar and brown sugar. Need to simmer till very soft, about 45 mins. Then use the liquid in the gravy. Mmmmmm

Roast butternut squash

or a Roast veg mix of cubed parsnips, butternut, red onion, etc with a liberal application of herbs and oil, plus seasoning and chilli if you like, and garlic.

Finely chopped leeks in cheese sauce

Buttery swede mash, roast honeyed parsnips and sauteed leeks. That's what we had with ours yesterday.

I love red cabbage though so we often have that.

Roast carrots with a bit of honey, a bit of orange zest and some thyme or a few cumin seeds.

Tiny baby onions roasted in olive oil and balsamic vinegar.

Green beans lightly stir fried with a squeeze of lemon and chopped parsley.

Dauphinoisse potatoes.

I fry an onion with a bit of chopped bacon and garlic and lots and lots of black pepper in olive oil, sweat for few minutes, then whack up the heat and add finely shredded dark cabbage and couple spoons hot water. Put on lid then cook for couple minutes and serve. Stir well and serve. Is delicious and no more soggy cabbage. smoky bacon works best and plenty of pepper and garlic is great. Also works well with green fine beans instead or in addition to.

Also do parsnip puree, boil 3 or 4 peeled parsnips with a potato and couple carrots. Drain and mash together along with a bit of curry powder, butter and or some cream, sounds odd but is really lovely. Can make in advance, spread in dish and just warm through in oven under the spuds.

Roasted beetroot. Cut them into wedges, toss in some olive oil with some thyme leaves and roast at 190 for about 45 minutes. Lovely!

Buttery mashed swede.... Mmmmmmm. Whole family, especially DS simply devour it.
