Your fish pie recipes please

I have picked up a packet of mixed fish (salmon, cod etc) from the fishmongers in our supermarket and want to make a fish pie.

I have never made one before so can I have your ideas please.

Personally, I use this method:

First, I poach the fish in half milk/half water, with a bay leaf and a few pepper corns added.
This only takes a couple of minutes. (Be careful not to let it boil over.)
Then I remove the fish and keep the liquid.

I make a white sauce using the poaching liquid. This gives the sauce a lovely fishy flavour.
A standard butter/flour/milk white sauce.
It's nice to add some fresh parsley, if you have it.

I then make the pie filling by putting all the fish, some mushrooms, some chopped boiled eggs and some chopped leeks in the pie dish and covering it with the white sauce.
I sometimes put frozen peas in too, if I'm not serving them separately on the side of the pie.

I top the lot with mashed potato and bake it in the oven for 30 mins or so to crisp up the top.
Yummy!!!

I made this Jamie fish pie last week, it was so easy and tasted really good too.
