Potatoes & Parsnips

Questions 1.

If i peel potatoes the night before and put them in a large glass bowl covernig them with water will they be ok till the day after?

Question 2.

Can i put the roast potatoes in with the turkey tin with the turkey?

If yes do i parboil them?
do i cover them in oil at the beginning?

Question 3 -

Parsnips - can i put them in the turkey tin as well?
do i parboil them?

All can go in bottom of turkey tin, although when cooking chicken like this (never done turkey) I add them for the last half of th cooking only - as take less time. I lift the chicken up, throw all the roast veggies into the hot fat, give them a toss in the hot oil and juices, and put chicken back on top. A la Jamie Oliver

If par boiling do them for a really short time so they don't go mushy at all - 5 minutes or so. I have to admit I don't tend to bar poil much at all.

Parboil them and drain them, then put them back in the pot and put the lid on and give them a good shake, it makes them crucnchier.

I don't parboil them but add to the roasting tin later in the cooking

you can put roast pots and parsnips in with the turkey - but your timing might go all wrong and you might find you don't have enough space in the oven. I take the turkey out and then put the pots in - you can whack teh oven up to mega hot to get them really crispy. Cover the turkey with foil and sit it somewhere - it won't go cold - it relaxes the meat and makes it more tender
