Banana tarte tartin is a good one. Make a caramel, add the banana pieces and shove some pastry on top, and bake.

I also have a dairy free banana bread recipe using vegetable oil. Never lasts long enough to go stale :)

I actually leave my bananas out to overripen, and slap the wrist of anyone who tries to take one.

Like wigeon, a frozen ripe banana makes the best smoothie on earth, only I peel them first, wrap in cling film and then freeze. They take up less room that way.

Was just about to post the smoothie idea!

I also peel mine, wrap in cling-wrap and leave in the freezer.

Along with bags of frozen fruits, they're brilliant for whipping up smoothies in a hurry.
