Here we are .. hope its not too late, is a fab recipe and I make it a lot.

2lb red cabbage
l lb chopped small onions
1lb cooking apples peeled cored and chopped small
3 tablespoons wine vinegar
3 tablespoons brown sugar
1 garlic clove chopped small
quarter whole nutmeg grated
quarter teasp ground cinnamon
quarter teaspoon ground cloves
1/2oz butter
salt & fresh ground black pepper

Discard outerleaves of cabbage, cut into quarters remove hard stalk and shred finely.

In large casserole arrange a layer of cabage seasoned with salt and pepper, then layer of onion and apples with sprinkling of garlic, spices and sugar. Continue with these alternate layers until all in.

Pour in wine vinegar, add knob of butter put lid on and cook for approx 2 and a half to three hours

Once cooked this will keep warm without coming to any harm and reheats successfully so can be made well in advance. Serve with sausages, pork dishes or Lancashire hotpot. (Delia's suggestions not mine

can i say this also freezes really well, so make double quantities. It is so nice to be able to take some out of the freezer on a sunday morning to have with a roast (particularly roast pork) without having to think about it in advance.
