with shallots and root veg, swede and carrots, it has been cooking all day, but it just tastes a bit sweet to me. What can I do to rescue it, it tastes lovely but just a bit sweet.

vinegar? adds flavour but will counteract the sweetness

yes, agree re the vinegar - add red wine or sherry vinegar in very small amounts (quarter of a tspn at a time) and keep tasting - this should "cut" through the sweetness.
