I'm making a steak and mushroom pie. Not really my kind of thing but it will make DH happy.

I cooked off braising steak coated in flour, then took that out, added onions, carrots, mushrooms, garlic, thyme and then beef stock to the pan, simmered, added the beef back, popped it into the oven about 2:30pm. I checked it just now, stocks boiled down, meat is tender, it tastes ok but could be better - not as rich as I want it. What can I add?

A little red wine?

Balsamic vinegar is always my magic ingredient. How about that + thickening up the sauce with cornflour or arrowroot?

gravy granules

marmite

worcestershire sauce

Marmite!? No way, I don't love him that much! I chucked the tomato puree I meant to add earlier in which made a difference. I'll go back and throw some worstershire sauce in. That should do it.
