How do I prepare and cook it? I just want it as an additional vegetable option with the dinner I am preparing tonight (roast lamb).

split in half
do not peel, scoop out seeds
slice into wedges and roast for about 30 minutes with a tiny cover of oil

You can either slice it in half, remove the seeds, drizzle with olive oil and roast in the oven for about 3/4 hour (you'd then need to take the shell off to serve it) or you can peel it, chop it into chunks, bung it in a dish with some olive oil over the top and roast it for half an hour.

You can crush a bit of garlic and fresh herb (rosemary or sage wold be good) into the oil and rub over it before roasting - yum

is also fab peeled and cubed tossed in olive oil turneric, cumin and chilli then slow roasted in the oven-great as a side dish with a home made curry

I used to wrap the whole thing in foil and just throw in the oven for about 40 mins.
When it's done, cut in half, scoop out the seeds and it's just like mash.

DD loves it.
