Have 14 adults and 5 kids coming for supper on boxing day. I thought as we'd have all eaten so much on christmas day I'll just do a buffet - cold meats, salads etc.

Does anyone have any ideas/suggesstions for anything quick and easy but still impressive? A couple of the women coming are they type who put on a fantastic spread from scratch and I know I'll feel inadequate.

TIA

Get a side of salmon from Asda (about £5.50). Whizz up 2 packs of rocket, a few basil leaves, a handful of pine nuts, garlic and olive oil (Pesto but not as strong as pure basil). Spread the mixture on top and cook for 20 mins in oven. Absolutely gorgeous and very impressive. Never fails in my book! Serve warm with new potatoes and cold meats/salads.

Anyone who lays on a table of food for 14 adults and 5 kids on Boxing Day when everyone is tired of having cooked all day the day before, and they won't have to clear up and wash up, will adore you, whatever you make!

A plate full of cold meats, home made potato salad, nice cheeses, crusty bread, green salad - hmmmmmmm heaven.
And some nice little cakes and bits forstuffing out on when the cold meats have gone down, bliss.

Don't drive yourself mad, something basic with lots of booze and they'll love you forever!
