Vegetable nuggets for kids?

I would like to make some kind of vegatable nuggets, to encourge my lilltle one to eat veg! Any ideas?

Mashed potao, carrots and peas, bind with a little egg, and shallow fry.

Daft question I know, but can you use instant mash?!
