Any suggestions for boneless chicken thigh recipe?

Any recipe that calls for chopped chicken breast - chicken thighs are tastier, so I prefer to use them in these kind of dishes.

little mini roasts...put stuffing inside them, and roast them in the oven.

or sticks of cheese, wrapped in ham, with the thigh wrapped around that.

I was all geared up to make a curry ... then I opened the package and the chicken smelled awful so I had to throw it out.
Fortunately I had some chicken breasts in the freezer which I defrosted.
