Can I put bread dough in fridge overnight

I'm new to making bread - after I knead the dough (shop bought mix - I just add water) do I let it rise before I put it in fridge overnight or do I put it in fridge straight away and let it rise when I take it out in the morning.

Also do I cover just the top of the bowl with cling film before I put it in fridge or do I wrap up the whole ball of dough in cling film?

Totally confused - sorry!

Put it straight in the fridge, clingfilm over top of bowl.

I've made pizza base bread dough at work and clinged it in the fridge to take home for dh for his dinner that night and then forgotten it. When I've taken it home the following evening and given it to DH he says it's tasty (and even prefers it for some reason) and still cooks in the same way
