Hi all,

Need some advice here

Am making cakes/ muffins for a work friends leaving day on Monday.

I?m doing some various fairy cake flavours [she wants fairy cake rather than slices to prevent the whole trying to eat something that you really need a fork for by hand situation]

Anyway she asked if there is any way I can do my lemon cake in fairy cake style.
Which isn?t a problem, it?s basically a victoria sponge mix with half a jar of lemon curd added , the thing is I normally do it as a cake with a light mascarpone filling and a passion fruit topping. You know the juice with icing sugar, but the thing is with the passion fruit top is that it?s always drippy; I can never get it to set.

Which is fine for a sponge but a bit messy for fairy cakes, I know the obvious thing is to add more icing sugar but I have spent the last 3 hours trying to get it to a setting consistency with no luck

What am I doing wrong?
Or am I on to a loser here?
