Got a big 'do' on next weekend and want to make lots of cake in advance - have chucked loads of choc biscuit cake in the freezer, but don't know if shortbread is ok when frozen? Anyone tried?

Yes, it should be absolutely fine Smile.

Thanks - just wasn't sure whether the high butter content would be a problem with freezing.

I made hundreds of shortbread cookies for my sisters wedding - froze the dough in advance and cooked the biscuits at the lat minute.

imo there is no need to freeze it, as it keeps for weeks in an airtight container in a cool place, so that will free up your precious freezer space. Never seen shortbread in freezer compartments at the supermarket as it has a long shelf life.
