What happened to good cheese?

I want a lump of good cheese.

Sort of cheddar but with those salty bits in it. Bits of bite.

And properly mature, none of these 'extra mature' claims when it is as bland as milk.

I want an eye-wateringly strong hard cheese to go with a sharp apple, good pickle and crusty bread.

Depending where you live you could try a farmer's market, the one by us has fantastic cheese. They even made us a 'cheese cake' for our wedding reception!

I agree with BlueChampagne (well actually i would rather pink but that is being fussy ), Montgomery's cheddar is the bees knees for salty mature crunch.

I found some lovely very mature Tobermory at the local deli. It was strong, had a good bite but creamy and nutty.
The apple was a Yorkshire Fragrant, the bread was Polish and heavenly, the pickle was apple, garlic and thyme.
I may have died and actually gone to Heaven, it was so good.
