Advice please! Barbie cake?

just had a barbie cake disaster. not properly cooked in middle and didn't rise much and now has gone v sunken in middle.
using wilton doll pan with the tube in the middle and vic sponge.

needs longer in the oven than specifies but not sure how long so took it out to check and hence sunk. also what temp?

not first time i've done this cake and always a bit hit and miss but don't have time for another miss have to bake and ice it before school run!

Second Madeira cake idea. Much firmer and better for shaping and holding the weight of fondant icing
