I have MANY MANY potatoes - please inspire me!

I bought 2 packs of potatoes from ASDA on Tues, then I saw my Dad yesterday who gave me LOADS more from the allotment. I hate waste, but I'm lacking inspiration.

My DS has a wheat and cows milk allergy.

So far I have planned:

Jackets
mash
wedges
fishcakes with wheat free breadcrumbs

Can anyone else suggest more please?

cube pots, chop rosemary, warm garlic in olive oil in oven, add pots/rosemary, sprinkle with maldon, 40 mins 180, shake/scrape every 10 mins.

No need to keep them in the fridge, the garage is fine, just make sure they are either in a mesh bag, or in a paper or natural sack. Not in a plasitck bag or box. Then keep them dark.

Potatoes from our veg patch dug now normally keep us going until about February.

Potato and Leek Dauphinoise:

4-5 large potatoes, peeled and sliced
300g leeks, trimmed and thinly sliced
50g butter
3 cloves garlic, crushed
100ml double cream
100ml milk
2 tablespoons grated Parmesan

Melt butter in a large pan - add leeks and cook gently until soft. Wash and roughly slice the wild garlic. Add garlic and cook for 5 minutes. Season well. Add cream and milk and bring to the boil. Add 1 tbsp of Parmesan. Check seasoning. Mix in a bowl with potato slices. Arrange in a gratin or ovenproof dish. Cover with tin foil and bake at 180°C/Gas Mark 4 for 1 hour until the potatoes are just cooked. Remove foil, sprinkle with the rest of the cheese - place back in the oven and cook until brown on top.

This goes wonderfully with roast lamb, or boiled gammon. It is sooooooo good!

Lovely suggestions - thanks everyone. Have to do some adapting to make them milk free for ds, but we've already had jackets and fishcakes, so we're well on the way!

Potato and leek soup or potato and watercress (normally a little early for soup, but with the way the weather is being at the mo...!) and they both freeze well.

cut into chip sized slices or bits and sprinkle with paprika and olive oil and bake till soft. saves having to peel them
