what to serve with.....

Am making cajun chicken with a raw veg salad (of fennel, kohl rabi and carrot) that has a lemon dressing for mine and DH dinner tonight.....was going to do new potatoes with it but does that go? Is there an alternative???

thanks! just concerned its going to be too dry - anything I can do to the rice to make it more interesting??... the chicken is dry....had thought of doing wedges but got no potatoes! Only got new pots, rice or pasta.....

would a carribean style rice and beans dish work?

The rice and beans sound nice and would help the dish not to be dry. I was going to suggest boiling the new pots, bashing them up and roasting them.
