It's my 8th Wedding Anniversary tomorrow, which I hear is 'salt' or 'bronze'. My husband and I tend to give each other little token type presents, and I thought I'd make him some salt caramels.

Does anyone have a good recipe that I can make without a sugar thermometer?

IT's really tricky to make without a sugar thermometer tbh, try making some toffee instead (far easier).

What a lovely idea though, Happy Anniversary.

I now have a huge box of salted caramels. Yummmmmmy.

I used Dan Lepard's caramel recipe

and sprinkled maldon salt on top when it was done. I just kept checking it while it was boiling by dropping bits into cold water until it was sort of chewy.

I'm going to have one now!
