I would like to do something really nice that I can prepare before hand NOT soup or prawn cocktail which we have every year but maybe something quite light that won't fill everyone up
Am having a traditional turkey lunch and as the organic turkey is so expensive I want the starter to be fairly reasonable. There are 8 of us no little kids just ds 11

I was just thinking the very same thing - I'm thinking of making a seafood terrine, as I could do it the previous day, and serving it with a vermouth cream sauce

Basically you line a terrine dish with clingfilm and blanched leaves of lettuce. Then you make a mousse of pureed seafood with eggs and cream which you put into the terrine dish. You can layer it up with prawns and herbs if you like. Then you cover it tightly and poach it in a bain marie for about 20 mins.
Obviously that is a very rough idea, you would need to google a recipe for it but that is how I remember making it years ago.
