Easy Apple Pie Anyone?

Has anyone got an easy recipe for an apple pie?

I am making it completely from scratch, including the pastry.

I don't know about easy, but this was is mine, in American measurements (sorry):
For crust: For Filling:
3 cups flour 5 large apples, peeled and sliced
2 tsp baking powder 1 cup sugar
1 ½ tsp salt ½ tsp cinnamon
6 Tbsp ice water ½ tsp nutmeg
1 cup Crisco Separately: 1 Tbsp whipping cream

METHOD

This pie should be cooked in a 9 inch stoneware or glass pie plate. To make the crust, you need to take a large mixing bowl and combine the dry ingredients with a wooden spoon, the flour, baking powder and salt. Remove ½ cup of this dry mixture, place in a separate bowl and add the 6 Tbsp water and mix until smooth. Cut the Crisco into the remaining dry mixture with a pastry blender until it resembles crumbles, then mix back in the dough that was combined with the ice water. Shape this into a ball, wrap in wax paper and place into the refrigerator. Try to touch the dough as little as possible, the more you mess with it, the tougher the texture will be once it bakes.. In the meantime, core the apples and slice them into another large bowl and set aside. In a small bowl, combine the sugar with the cinnamon and nutmeg. Preheat the oven to 400 degrees. Get the pastry out of the fridge and divide in half. Roll half the dough out between two pieces of wax paper into an 11 inch circle and then drape over the pie plate. Add half of the apples to the bottom, then sprinkle with the sugar and spice mixture. Top with the remaining apple slices. Roll out your second pastry circle and drape over the pie. Trim the crust to fit, take additional water and wet the edges of the bottom crust and press the edges together all around to seal. Prick holes into the top of the crust and then brush with the 1 Tbsp of cream. Bake this in the 400 degree oven for 50 to 60 minutes. You may have to place foil around the edges or the top if the crust starts to burn and the end of the cooking time. The pie and the crust are really, really good!

ingredients got screwed up sorry:

Crust:

3 cups flour
2 tsp baking soda
1 1/2 tsp salt
6 Tbsp ice water
1 cup shortening

Filling:
5 large apples, peeled and sliced
1 cup sugar
1/2 tsp cinnamon
1/2 tsp nutmeg

1lb self s flour
4 ozlard
4ozmarg
pince salt
mix until like bread crumbs mix with little water, then mould together, put in fridge to cool

cut apples par boil had sugar when cooled roll pastry and make

Top tip for apple pie - you can get unsweetened sliced pie apples in a tin (Tesco certainly do them). Bung them in a pie dish with sugar/spices/raisins and cover with crumble or pastry and bake for 30 mins. V good for impromptu in-law visits .
