I think if you mix O, CO2 and throw in some H2O you will get a lovely fluffy haint version..

I'm confused about the mixing stage too.

As I've got plenty of time today, I think I'll try one lot barely combined and another one whizzed in the food processor.

Or is that too extreme? Should I just mix by hand?

Gah! This is why I hate recipes with no picture. I like to know what I'm aiming for.

MatthewWrightOffTheTelly, I actually added a couple of hours to the cooking time to make sure there was really no risk of salmonella but I think it could have done without.
