Blackberry Recipes Wanted, Please.

I intend to go blackberrying with my lot in the next few days when it finally stops raining and am looking for something to do with them, other than the usual apple and blackberry crumble.

Any ideas?

Blackberry Flapjacks:
120g butter,80g demerara sugar, 2 tbls golden syrup, 250g rolled oats, 1 grated apple, 250g washed blackberries

180c/gas mark 5
melt butter, sugar and syrup, when melted add oats and apple
mash the blackberries with a fork
grease a 20cm cake tin and line
press half the flapjack mix in the base, smear the mashed blackberries over the top.
gently cover with the rest of the flapjack.
bake in the centre of oven for 25/30 mins or until nicely browned
it does take a little longer than normal flapjack as its quite moist.

Add some to a basic muffin mix, in the bottom of a cake tin for upside down pud, or on a meringue base (small bought ones or a big one for a fancy pav). They go really well with duck if you want a special dinner.

Vodka. Weigh the empty vodka bottle. Fill almost half of bottle with blackberries and then weigh again. The difference between the two weights is the weight of the fruit, so add the same weight in castor sugar. Top up with vodka. Shake. Leave in cool dark place for three months, shaking at least every week. Strain through a coffee filter paper. Eat berries with ice cream. Drink infused vodka with ice or in shots.

Either neck it all at Xmas or give to friends as presents.
