Food Rut: ideas for baby, toddler and me

It's probably been done lots before, but I'm stuck in a right old food rut. It's me, DD (2.5) and DS (7mo) most days for lunch, and DH makes it home for tea.

They both eat most stuff - we try and eat red meat maybe only one a week. Quite keen on pulses, fish and eggy stuff.

At the moment, feels like we're relying a bit too much on sandwich/toast based stuff, and not enough veggies. Any ideas?? Especially for exciting but not overly-elaborate lunches.

Not v exciting. But -

Omelette - chuck in ham/chicken/peppers/sweetcorn/onion/peas/onion/cheese/tomatoes etc.

Tinned mackerel grilled with a breadcrumb/tomato salsa mix on top.

Bean stew, get a tin of mixed pulses add chopped tomatoes and bit of seasoning very easy and yummy.

Frittatas can use any vegetables in them and it always tastes good.

Couscous salad, lots of veggies go with it.

If you have time make few dips, messy but my little girl loves it.

Thanks for the ideas, already feeling a bit more inspired. Like the idea of tortilla as could keep some for a second meal.

Gabriele what kind of dips do you make? They sound ideal as sure DS would love the mess!
