I made 4merlyknown's jam in the end, because I didn't have time to make the chutney.
It's more of a dairy-free bannoffee sauce than a jam. Smells heavenly and is very tasty, but really a bit too sweet for me.
A couple of clarifications of the recipe, in case anyone else wants to make it:
The bananas need to be completely pureed, mashed smooth with no lumps. I let it be lumpy, and the finished product looks awful (still tastes gorgeous, though
)!
"stir until syrup thickens" I think they mean until the sugar begins to caramelise and make a toffee. Otherwise you end up with a slop that doesn't set at all (and still tastes gorgeous
).
I used just over 1kg of bananas, peeled weight, and got 5.5 half-kilo jam jars of sauce.
I am definitely going to make that chutney at some point.
