Jar of red pesto - What to make?

I've got a jar of red pesto with a use by date of yesterday today. Anyone got any useful ideas of what I can do with it before I make the usual chicken pasta.

Spread it on a salmon fillet, top with cheese, bake.

Slice chicken breasts in half, smear with pesto then add either:

• sundried tomato
• cream cheese
• mozzarella

-sausage meat

• or combination of the above

and wrap in parma ham bacon or leave as is and rub with olive oil/salt/pepper and bake in foil

Red pesto is really nice stirred through couscous and roasted veg.
