Strawberry Jam

I made some tonight for the first time. It's from the River Cottage book of Jams and Preserves. The jam looks amazing, tastes AMAZING but all the strawberries have risen to the top of the jars so it looks disappointingly amateur!

I am of course an amateur (have only made Seville orange marmalade from the same book-a huge success) but if I make another batch, how do I stop this from happening?

You need to let the jam cool slightly before bottling it.

aaaah. great-thankyou! I was worried about it getting too cool and then bacteria etc being a problem, so I did bottle it fast into the hot jars....

You could take it out of the jars, re-boil, cool for 10 - 15 minutes and then jar it again.
