Moussakka question!

Ok, we have a few abergines in our organic veg bos and i was gonna make moussakka for tea tomorrow...

but the only recipe i can find is in the dinner lady cook book and she doesnt use aubergines at all, just potatoe!

I was under the impression that traditional mousskka is a lamb mincy layer, a layer of sliced aubergine, then a layer of white cheese sauce...

BUT if so WHERE is the carbohydrate?

Do you add in a layer of potatoe as well somewhere like in the dinner lady book?

also if you layer in potatoe do you cook it or par boil it first?
also do you cook aubergine or just slice it?
Any help will be very much appreciated!

I used to have a really nice moussakka recipe but I have lost it .

However I have used the Dinner Lady recipe and have just added some aubergine, sliced, brushed lightly with olive oil and grilled, either on a ridged griddle pan or just under the grill.

My original moussakka recipe had potatoes in it and any moussakka I have eaten in Greece has had potato in it. I would par boil the potatoes and then slice.
