Once lived with a friend who used to bake onions in their skin. They were delicious. Anyone know how to do this? (am I being dim)

Roll in veg oil then roast on a tray on high for 50 mins. I put them in with potatoes to cook.

I peel them and bake them with cream and parmesan cheese [greedy] - you don't even need a recipe but there's one here: www.guardian.co.uk/lifeandstyle/2004/feb/15/foodanddrink.recipes

I've also roasted shallots in their skins with thyme and balsamic vinegar - 3 or 4 roasted for about half an hour and eaten with some cheese and bread is a lovely solo lunch when I'm working from home.

I know it's not strictly what you are asking, but Ottolenghi does AMAZING stuffed onions that are baked
