Longer lasting cakes

My friend has just opened a café and his Mam has been making lovely cakes. Unfortunately she has fallen ill so I have been helpimg out a bit. Can anyone recommend cake recipes which last a little longer or that freeze and defrost well? Thanks in advance...

Look up Sophie Grigson , Sticky ginger cake, it just get nicer and nicer the longer you keep it.
I think sponge freezes well and ice it when defrosted

Lemon drizzle would keep well as its moist and is always popular

madeira keeps well too. As does they type of chocolate cake where you put melted chocolate in with melted butter/oil then add to dry ingredients. If you ice all round and top with buttercream that seals in the moistness too.

Choux pastry freezes very well, just fill them as you need them.
